There are still spots open for this workshop, which is sponsored by FBM. In addition to covering all the basics of making chocolate from cocoa beans using small-scale equipment, specific attention will be paid to the use of FBM's KLEEGO conche and the use and setup of FBM's UNICA continuous tempering machine, including the fastest way to determine the temper points for a new bean-to-bar chocolate recipe.

3-day workshops at the JMA school are normally $1050, but for FBM customers, people interested in purchasing FBM equipment, and ChocolateLife members, the price is just $350. If you are interested in attending to get the special price, please contact Clay Gordon directly at workshops [at] thechocolatelife.com. Tuition covers all three days of the workshop, including lunches, plus a group dinner on Wednesday night.

Clay will be participating all three days and adding his knowledge to the class and will be hosting informal after-hours get-togethers in the hotel each evening. These discussions will be open to any and all chocolate-related topics of interest to the participants in the class.

We are recommending students stay at the Rio All-Suites Hotel so we can all travel together, though the Palms is immediately across the street and is connected to the RIO by a sky bridge (if I recall correctly).

Andrea, as of yesterday (Sunday, Apr 19) afternoon, this class is full.

The workshop will be offered at least once a year - hopefully twice. I will know more about when the next one will be when this one is over at the end of next week.
