Hello all! I am writing an article on the chocolate scene in Brooklyn and I would love to get some feedback from West Coasters: what do you think about the Brooklyn chocolate scene? How does it compare? Comments from non-Californians welcome too, please mention where you're writing from and whether it is okay to contact you for further info and quote you in the article. The article is for Dessert Professional magazine. Thanks!

You should definitely get information from Brady (who is a member of TCL) for your article. He's very knowledgeable, and knows all about the chocolate scene in NYC.

Two changes we made with the chocolate is that this time we winnowed the chocolate. This time we didn't use a blow dryer to melt the chocolate. Two improvements with the chocolate is that the melanger didn't get clogged this time and everyone put in work.
