What do users of this machine do when the chocolate they use is in button form and they want the convenience of seeding with a block of chocolate so that the block can be easily removed? Do they use a different chocolate to seed?

There is no harm leaving small amounts of seed chocolate in the back of the bowl. In fact, if you raise the working temperature of the bowl slightly, you can put small amounts of chocolate behind the baffle to melt in as you remove chocolate from the bowl. What the temperature rise is depends on the chocolate and the amount your working with, and whether or not you're using the holey baffle.
