Monday June 25

Chocolate Making from the Bean: micro batches of pure chocolate, milk and white

 

Tuesday June 26

9:00 am -3:00 pm

Plantation tour to an organic, shade grown, family farm 

 

Wednesday June 27

9:00 am-12:00 pm

Processing Cocoa Beans: fermentation to nibs

 

Thursday June 28

9:00 am-12:00 pm

Rustic chocolate and creating fabulous chocolate bars

 

Friday June 29

1:00 pm-4:00 pm

Finishing bars and chocolates

 

Discussions: 

business aspect of chocolate making

fair trade, organic, shade grown

global state of chocolate

Direct trade with farmers 

 

**Tastings:

Each day, we will taste and and discuss the flavor and other characteristics of various brands and percentages of chocolate

 

Course participants will take home plenty of chocolate and other products that you make.
