Location: Mindo, Ecuador

Monday June 9

Chocolate Making from the Bean: micro batches of pure chocolate

We will take a look at Mindo Chocolate Maker’s process and put in our first batch of chocolate.

 

Tuesday June 10

9:00 am -3:00 pm

Plantation tour to an organic, shade grown, small family farm

Meet a small cocoa farmer and family. Learn about different varieties of cacao plants, learn about different diseases that affect cacao, taste the fruit fresh from the tree, have a chance to harvest cacao and prepare it for fermentation.  Typical Ecuadorian lunch included on this day.

 

Wednesday June 11

Post Harvest Processing of Cocoa Beans: fermentation to nibs

Hands on experience with the stages of fermentation, drying, roasting, winnowing, grinding into cocoa nibs

 

Thursday June 12

Rustic Stone Ground chocolate and creating fabulous chocolate bars

Each day, we will taste and and discuss the flavor and other characteristics of various brands and percentages of chocolate and comparison taste cocoa nibs

You will take home plenty of chocolate and other products that you make.
