Chocolate Making from the Bean: micro batches of pure chocolate
We will take a look at Mindo Chocolate Maker’s process and put in our first batch of chocolate.
Tuesday June 10

Plantation tour to an organic, shade grown, small family farm
Meet a small cocoa farmer and family. Learn about different varieties of cacao plants, learn about different diseases that affect cacao, taste the fruit fresh from the tree, have a chance to harvest cacao and prepare it for fermentation. Typical Ecuadorian lunch included on this day.
