Hi, I'm new here at the Chocolate Life. Just wondering how home chefs/chocolatiers store their couverture? I know it has to be stored at around 50-62 degrees Fahrenheit, I guess a wine cooler or cellar is my best bet. Does anyone have a wine cooler they use to store couverture or chocolate at home that they can recommend? Something not too huge or too tiny. Thanks!

Vinotemp manufactures a large selection of coolers and cooing units. I'm sure at least one of them will suit your needs. I use a small (12 bottle) cooler myself, but more as a cooling cabinet than as couverture storage.I would recommend adding a Polar Fresh filter to soak up some of the moisture the thermoelectric cooler condenses inside the cabinet.

The wine cooler is your best choice. I would not use a cellar because it has a lot more moisture. At leat with a cooler it is less humid and more of a temperature controlled environment. I have one at work, its a euro cave but I am sure anyone will do.

Hi Kate -- You are correct in that conditions for Wine Storage and Chocolate are pretty much the same. I don't of any specific wine/chocolate storage "machines" to store the chocolate. If I hear of anything, I will let you know. Thanks John
