Ah, ok. Sounds like old technology works great for this end stages of drying cacao. I'm all for traditional methods of processing. Would like to find a construction plan for a drying house like this for Hawaii.I appreciate your photos posted here, great shots showing good detail of the subject matter.. Not all that much, but conservation of heat during the end stages of curing is an important issue. You can see this in classic patio drying sites as well--they'll pile the cacao back up at the end of the day and cover it overnight. These type of drying houses allow for a less laborious version of the same idea.
