Hi,
would like to know the performance of the Eztemper machine. What exactly does this machine do? to my basic knowledge, you have to raise the temperature to about 45C to melt all the crystals and then cool it to 29 or so ( depending on chocolate formulation) to form crystals and then reheat to 32 to melt away the unstable crystals.
