Advice on storing roasted nibs

Dear firends. I would appreciate some advice. I roasted, cracked and winnowed my first batch of beans this past weekend. I put the nibs in a ziplock bag while I am waiting to get the cocoatown melanger ready to use. Will the roasted beans go stale within a week? Is there any better way to store the nibs or would it be best to crank up the melanger and start grinding ASAP?Beans are very hard to come by here in Chile and I would hate to waste the precious few lbs that I have.Thanks for the help on this.Cheers,Mark
