Chocolate captured with fungus

Recently i made truffles and i didnt kept  inside refrigerator because the weather was not so hot .but soon it was covered with fungus and got rotten.can somone please suggest me how to increase the shelf life of homemade chocolates and which chocolate we can make in summers so that to aviod it from melting?
