Stone grinder vs. Ball Mill

Hi! we're already producing chocolate with a 3rd party that owns a ball mill and we're interested in buying our own machines but the startup costs have directed us towards the stone grinders.

Anyone with experience in both? We're concerned with homogeneity and very pronounced acidity being a problem with the stone grinder, any thoughts? 

We're not very experienced with either method so any info is very much appreciated.
