Hi Emi,Although I make chocolate in Hawaii I don't use exclusively Hawaiian grown chocolate. Its pretty pricey and the flavor profile not as good as some Latin American chocolates. I do a few items with it and carry all the bar producers to support our local farmers. Basically GardenIsland chocolates in Kauai, The Original Hawaiian Chocolate Factory in Kona and Waialua Estate on Oahu whose 70% is the best of all of them.
