That One Bar of Chocolate

For me it would have to be Amedei's Cru Venezuela. I visited Amedei in Sept, sampled almost all of them, but the Cru is a classic bar, for fun, I also liked their white chocolate with pistachio.

Australian Chocolate Makers-call out

My company is Exotic Chocolate Tasting that hosts guided chocolate tastings (mostly paired with wine) in the New York area. Working with chocolate makers that represent South America, Madagascar, Ghana, and Bali that are single origin, fair trade and organic. I don't have any chocolate makers that are from down under. My brother lives in Sydney and will be visiting me in New York Sept. 24. If you would like to have your special chocolates as part of my tastings, you can contact Rick and he will bring them with him in September. They will be featured on my website with a link to yours for purchase and promoted elsewhere on and off line. Photos will be posted here, on my site and on Face book. Chocolate Show - New York 2009

The 12th annual Chocolate show just ended yesterday at the Metropolitan Pavilion. If you did not get a chance to go, take a look at the pictures. The only time eating chocolate is acceptable at 10am! View Photos on my page.

Thank you Clay and Mindy, I'm pleased that you offered your expert advice on tastings, and yes this is my first one. Not a novice to chocolate, but this is close to a science and I do want to compare apples to apples, or should I say...cocoa to cocoa. I now have your book and I will refer to the tasting pyramid section. I live in New York, therefore, I have access to the best. I'd like to include the newest trend- Raw chocolate. I'll stay with bars, and will include just one round of milk chocolate. It's all a matter of taste, I can see that milk chocolate may get bumped in the early round, since I and most of my friends prefer dark. So does a great Milk like Askinoise's, stand a chance to holding up in round 2 against a premium dark? Will the fix be in? The findings will be noteworthy and will post.

I'd like to host a chocolate tasting with friends, have them sample the best dark & organic chocolate in a blind taste test, if you have any thoughts on your tasting, please share

Trader Joe's 72% Chocolate Bars...

I always have TJ's dark organic 73% bar handy, I call it my medicinal everyday chocolate. Their Fairtrade bar is just as good. I've also baked with them. The price is low compared to the value. I've had bars that are $6-$10 and I would put them is a blind taste test, and I bet they would do well. One of my favorites is Blanxart from Spain; its a very thick smooth tasting artisan bar with a hint of fruit, not sweet at all.

What are your favorite adult beverages to pair with chocolates?

I've done many pairing to date and I have a few favorites...Gnosis Superchoc or Simplicitywith 2008 Weingut Michlits Pinot Noir Ros Frizzant from Austria and Madecasse 75% Intense dark with aWhite PortBoth compliment and balance out the the richness of the chocolate and cuts the sweetness of the wines.
