Johnson Temperature Controller

Jennifer, I'm using a Johnson temperature controller in a 3 door Continental refrigerator.  I run a temperature of 45F and the humidity is 35 with no problems

  • I have a Unica, but it's basically the same process. Put chunks of chocolate in the working bowl set your temperature to 49 or 50C turn on the stirrer. When there is about 2 inches of melted chocolate turn on auger. If chocolate dose not come out of spout in 15 secs turn off the auger and turn auger back on after a few minutes. Robert

Opinion on Continuous v Batch Tempering

Freddo, I have been using Fbm Unica for about one year now. I would strongly recommend this continuos tempering machine. As Clay mentioned you will want to add the artisanal package such as the heavier motor for craft chocolate.  The working bowl holds 25kg of chocolate. Simply add chunks of chocolate when the bowl is about half empty and continue working your chocolate. No need to seed. The only downside in my opinion is working manual is limited. However, having said that, Fbm will Skype with you and give you very good technical assistance.

Cheebs, is the Nixtamal grinder that you are referring to have metal disc or is it using stone wheels for grinding?
