Conned into the chocolate world through my profession as a Therapeutic Chef and Product/recipe Developer. I find myself steeped in the chocolate world and captivated by the prospects of the regenerative potential of our trade and consumption of chocolate on our health and everyone invovled in the value chain. I desire to connect eaters to the story of their food from the land to the taste experience and health effects. I spend most of my time making chocolate for other companies, importing and supplying ingredients for our use and for other craft chocolate makers. I wish to see the world of chocolate defined by a diverse offering of Craft chocolate makers sourcing their ingredients from farmers and cooperatives that are valued and paid well for the regenerative work that ensures the indefinite supply of fine flavored chocolate for the consumers to deeply appreciate.
