Small chocolate makers, come and meet cacao growers in Ecuador.  Several cooperatives will be present along with some of the best suppliers of fine cacao.
Seminars on fermentation, roasting, winnowing, refining, conching and tempering will be available.  New 90 pound ball refiner-conching machine will be exhibited.
