Very 1st photo of wild cacao pods...
In about one month's time we are off to the North of Brazil to meet a small community that once collect wild cacao. Nowadays they only deal with wild açaí. They never fermented this cacao, as usually is the case with occurrences of wild cacao in the Brazilian Amazon. We will try to set up a small fermentation facility, so that when the season comes in 2016, hopefully we will have enough fermented beans to run samples on this cacao. Very exciting to make a chocolate with these beans!!!! Hopefully we will find beans from the Guiana family as classified by Montomayor et al.
