Marc, thanks so much for your input. I'm wary of the Bain-Marie method because I'm concerned about moisture getting into the chocolate. But maybe I'll give that a try simply because the dehydrator is so slow.... I don't want to use the microwave either:-( At the very least I'll probably get a heating tank that I can use overnight to melt the chocolate down - just want to make sure that would be the best piece of equipment for the monent.
