Allie,

Since I make my own sugar-free chocolate using the natural (and low-carb) sweeteners xylitol, erythritol, and stevia, I was interested in finding others who also make sugar-free chocolate. I went to the Angelic Chocolate website and couldnt find the nutritional values for their chocolates, so I called them to obtain additional information. The woman I spoke with told me that a pound of their Healthy Chocolates is approximately 20 pieces, and the total calories for this amount is 100. She also said there are 9 grams of carbohydrates and 0 grams of fat in one pound of these chocolates. The woman went on to say that their Healthy Chocolates are 98.5% cacao, and that they grind their own beans.

I decided to research the nutritional values for cacao beans, and found that they contain approximately 50% fat. According to nuts.com, one pound of their organic, raw cacao beans contains approximately 2,880 calories, 240 grams of fat, and 112 grams of carbohydrates. If their chocolates are 98.5% cacao, the nutritional information they provided me is obviously incorrect; however, their claim that their chocolates are sugar-free is substantiated. My opinion, based on the nutritional analysis, is that this chocolate is almost as bitter as unsweetened chocolate.

The chocolate that I make using the natural sweeteners listed above looks, tastes, and has the same mouth feel as chocolates sweetened with sugar. There is no aftertaste with these sweeteners and the xylitol actually brightens the flavor.
