Tracking the conching process
The progress of flavor development during conching in the Kleego is tracked every 10-15 minutes. A small sample is pulled and tasted. The bowl temperature, air temperature (%), and stirrer speed (%) are all noted. As you can see, about 90 minutes in the temperature of the air is reduced. This is probably an indicator that the unwanted volatiles have been driven off and Jean-Marie does not want to drive of wanted volatiles.
