Just called Peters and they do have a 70% bittersweet.

I'll go back to their brochures before I order Monday.

I have tried the Guittard samples before. No my customers are not sophicated enough to know the difference & $8/lb would not fly I am sure. So I guess Guittard it will be...

if I have difficulties obtaining trial amount, I'll let you know. Thanks so much!

I have always used Peters, but need a higher cocoa content product for a few clients.

Do want to test before I go crazy ordering. Maybe they can help me with this.

I usually purchase about 1000 lbs at the time & have it delivered by truck.

I wanted to try out a dark chocolate before buying in bulk. 100 lbs would probably

do my customers for Christmas. Could not remember the different brands, so you have really helped me. Thanks!

I have a client that wants solid chocolate in a very high cocoa content (he is an ironman participant) for Christmas Gifts. Where could I order not a huge volumeof really good dark dark chocolate? Like 100 lbs to start...

Bacon

I have had many people asking for bacon & chocolate. What is the life span of bacon dipped in chocolate if kept cool (64 degrees air temp) ( I usually make it just before serving at parties).

Is it possibly that coating the bacon in chocolate helps to preserve it? I use dark chocolate.

Have a job of 100 boxes of truffles and wanted to put "1" truffle with bacon in the box.

Chocolate Artist Software/Printer

I purchased the software and tried the transfer sheets. Today I am using the EPSON STYLUS C88 as a regular printer - if that tells you anything. No information comes with the software, ink is very expensive, and it totally did not work for me. Wasted money.

Tomric should tell people that unless you apply a white background, the software & sheets don't work well.

I just orderedthe sheets preprinted with my customer's logo & they worked much better. Wasted much money.

I agree the software needs work. Tomric didn't tell me that the design has to be done on white - & I don't have airbrush equipment yet. On my list! So I can improve!!

In NC you have to purchase precooked bacon or go to a restaurant facility to cook the bacon.

If the bacon is cooked & dipped within 24 hrs of delivery, I would think I would be safe. However, there is the question of how quick the folks that receive the gift would eat the bacon truffle. So maybe I need to shy away unless it is for a party and prepared just before the event.

I have always cooked the bacon crisp and prepared within 24 hrs of taking to an event.

Now someone wants in their boxes of Easter Truffles. It would be eaten within a week.

Safe?

Colored Cocoa Butters from ChefRubber

Chef Rubberdid a custom design for me and I was not happy with the results. They should have told me the design should have been enlarged for a larger truffle so you could tell what it was.Their stock designs are wonderful! Great resource for lots of items.

Selling at farmer's markets... in the heat of summer?
