Hot Pan manufacturers

Posted in: Opinion

Clay,

If you go through the website of Warrell Corporation, I am sure you will understand what I am looking for. ( http://warrellcorp.com/ManufacturingProcesses/HotP )

I was there for PMCA chocolate panning class. For Hot panning you need Copper pan with burners below the pan to caramalise the sugar. Those you mentioned are definitely the ones I am looking for. But it seems they can`t produce big batches. I needPan with 15-20 kgs (i.e around 30-40lbs) capacity. Any insight? Thank you so much.

Raji from India.

Hot Pan manufacturers

Posted in: Opinion

I plan to buy a Copper hot pan with gas burners at the bottom. The one I already have is Selmi Comfit. It is very efficient in soft panning, chocolate panning and sugar panning as well. Now I want to add hot panned nuts to my product line. My plan is to buy a pan which can produce 30-40 lbs in a batch.

Anyone have the idea who manufactures this kind of Copper hot pans with gas burners at the bottom?

Raji from India.

Indian Cacoa

Posted in: Tech Help, Tips, Tricks, & Techniques

Hi Omkar,You don`t need any govt permission or such things to grow Cacoa in this country. What you need is land and materials. Here in my area (west coast , close to port city Mangalore) it is easy to get Cocoa plants. Wet Cacoa seeds germinate easily. If your area is hot and humid , I feel you can grow Cacoa. You may try with agriculture dept nurseries or else Cadbury centers. Hope this information helps.Raji.

Indian Cacoa

Erin, I am from South India. Most of the Cacoa growers sell wet Cacoa beans to either Cadbury or other chocolate gaints like Amul, CAMPCO, which are cooperatives. A few farmers ferment and sundry their produce and then sell it.Raji.

Indian Cacoa

Posted in: Tech Help, Tips, Tricks, & Techniques

Bette, I grow Cacoa commercially. I am not a keen Organic grower. If you wish I can send you a couple of Kgs of Cocoa beans by Courier. If you are really interested in Indian Cocoa I can export as much volume as you need. Right now I don`t have export license. It will take a while to obtain it. Let me know the probable price too.Raji.

I wonder why Indian Cacoa is not discussed in Chocolatiers Forums . Is it because it is not exported ?I am a professional Chocolatier and Cacoa grower as well. Most of the trees here are Forestero variety.

chocolate tempering machines

Posted in: Opinion

I wonder whether I can add my experience with Mol d`Art melter. I simply love its work.6 Kg capacity. I put the chocolate in the melter setting temp at 43degrees the previous night. Start my work in the morning after setting temp at 31 degrees and seeding it . Takes a little time. Looks like a simple box, quiet. liked it so much that thinking to buy one more for melting milk chocolate.I wonder whether melters are considered as tempering machines!!
