Chocolate Silk Screen Supplies

Posted in: Tech Help, Tips, Tricks, & Techniques

Christina,I too have been trying to figure out how to make my own custom screens for cocoa butter. Have you found food safe supplies yet? I came across what's called YUDU which is a silkscreen machine. It uses emulsion sheets instead of regular liquid emulsion. I was just wondering if those emulsion sheets are or could be food safe after washing the screen before using it for printing. Any thoughts on this? I wonder where we can obtain info on the food safety of emulsion sheets. Does anyone have any ideas?

Tempering with Beta 6 crystals

Posted in: Tech Help, Tips, Tricks, & Techniques

Has anybody used Beta 6 crystals for tempering? I just wanted to know how the results compare to other tempering methods (machine, seeding, etc.). What are the advantages/disadvantages?

Hi Jeff,It was a very informative session, although short and fast. Sorry, I was in a hurry to beat the Chicago traffic going home, I did not have the time to introduce myself to you. I hope you enjoyed your stay in Chicago.Irma

What are your favorite adult beverages to pair with chocolates?

Glad to know someone else enjoys Prossecos paired with chocolate. At my last party, the theme was "chocolate". Every dish, savory and sweet had chocolate in it. I served bottles of Prosecco and tried to convince everyone to try it with my chocolate desserts especially the truffles. Somehow, I did not get any rousing approval from anyone. No matter, it is still my favorite combination. As you, I like, Mionetto and Malvolti
