Can chocolate go rancid/ taste off once opened- Please help !

ther is no dought that chocolate get spoiled wen exposed to humidity, avoid contact with air by foiling, or by keeping in air tight containers, or keep in closed room to avoid as much as humidity, nobody canot say how soon a chocolate will get spoiled it depends on humidity , presecnce of microbs and other parameters.

lt depends on even the brand, try changing your brand, In india most of the companys are making only compound chocolates it some times give a soapy of flaver when exposed to air.

In my native place Kodaikanal peoples are keeping chocolates in open for months with out geting spoiled, here temprature is usualy below 16 degree celcius ,

Tempering

It depends on do u already have one machine or do you wish to buy one, each tempering machine works on different systems even though the basic principle is same. Need more clarification about what type of machine you prefer, how much quantity you wish to process, and wat do you going to do with the tempered chocolate like, moulding, filling, enrobing........ And what type of chocolate u work with....????

Cooking milk powder

I think it is what we are still practising in india. Because when i use some batches of milk powder despite the brand some times it taste aweful , when i asked my supplier he told that it is because of the preservative . so before i am purchasing milk powder i always taste it to make sure that, the batch is good. ( I am not a techinical person to do the lab test). sebastian you are wondering if it was some historical practice , if you know that some of our most modern technologys are that, west practiced it some 200 years before,then how much you wonder about..??

Cooking milk powder

hi chirag,

instead of 'everyday' you can try 'nova whole milk powder' that works better. before you are mixing milk powder you must taste it to ensure that it is not salty. because some baches of milk powder tends to be salty. every day is a dairy whitener not milk powder.it contains added sugar also. for any other clarification you can write to me at mannachoco@gmal.com.

No need to swich of your wet grinder in intervals just remove its plastic cover and put one table fan facing electric motor , now you can run your grinder non stop.
