My Santha melangeur has roller stones with 20cm diameter (8 inch), and the bowl capacity is 40 liters (10 gallon). I have made batches in it as large as 22kg (48lbs) and as small as 5kg (12lbs)

Conching temperature control in wet grinder

I bought a small Johnson Controls temperature control unit (A419) from a home brewing supplier through Amazon. The unit needed to be switched from "switch off when too cold/on when too warm" to the opposite ("off when too hot, on when too cool"). It was an easy switch to make that the unit's manual described well, although I did need to remove the front cover. Easy enough for anyone who can change a light bulb. The heat gun I used is a HomeRight C800781 Heat Pro Deluxe II t hat has some temperature and speed control. ( http://www.amazon.com/gp/product/B003IHVANI/ref=oh_details_o01_s00_i00?ie=UTF8&psc=1 ).

I attached the heat gun to an artist's easel, as it made positional adjustments very easy.

Conching temperature control in wet grinder

Hi all,

I have set up and am running with a similar setup to Gap. It seems to be working well.

Does anyone know what temperature the epoxies on the Premier wet grinder will withstand? I am about to start conching and would like to know how high.

Beth and Clay,I have used my Premier Wonder grinder to make some decent chocolate and have successfully had the machine run for 48-72+ hours (depending on batch size, I run until I am happy with texture/particle size, then release pressure on wheels and "conche" until happy with volatile acidity/aroma/flavor) for more than 10 batches. I have made up to 6.5lb batches in the Premier. I also have a Santha 40 melangeur. I am happy with both, although have had to replace the belt on the Santha and I think the Premier may be starting to slip (main nylon central "shaft" slipping in base locking ring).Regards,Tim
