Hi Jeff! Thanks SO much for all of your tips! It will be a huge help! I am applying for a grant and this will help with my plan! Much appreciated! I don't know much about ecolechocolate, but I think your plan sounds nice. I met someone who was taking their online classes for chocolate and I couldn't figure out how that would work. It is such a hands on thing to learn! They seemed to like it though. I actually went to the French Pastry School in Chicago. I absolutely LOVED it! It was very tough...but SO worth it! I learned pastries, breads, chocolate, sugar, etc... It was a 6 month long course...so I would say if you are mostly interested in chocolate, then I think Belgium would be an amazing place to study! How inspiring it would be! I love working with chocolate. I never get tired of it. I learn new things all of the time. I love sculpting with it a lot too. Creating all of my own recipes is so rewarding. I hope you get to study chocolate soon!Jeff...I am signing off for now. I am afraid these busy Mother's Day hours have caught up with me! Hey Jeff! Thanks for the quick reply! So are you in America now? I am going to San Francisco in June for my first "chocolate trip". I am excited about it! My budget for France/Belgium is $3,000.00 which will have to include airfare. I have been thinking September for some reason (probably because it is right before my busy season)...but I would love to go at the best time of the year. I want to take in a lot of art while we are there as well. My husband and I are both artists and chocolatiers... I also hope to visit Barry Callebaut and lots of small...not so famous shops too. Thank you for the list of places to go to...It will really help me plan things out! It is really overwhelming! Especially since we have never been to Europe.

Hey Jeff! I am trying to plan a "chocolate trip" to France and Belgium. I would love any information you could help me with! I am trying to plan my itinerary this week, with Brussels being one stop for sure. I did look at your website and got a lot of information from it...but I am hoping to find the best places to stay on a tight budget. Hotel Madeleine? When is the best time to visit? What chocolate shops should I go to? ....etc... I would appreciate any help! I am applying for some assistance to help fund this trip so I can come anytime this year...except around the holidays because I have my own chocolate shop I need to run. Thanks! ~Wendy
