The choc "tour" is free at Scharffenberger! I was unable to go but I heard its a good look inside the factory, porbably thru windows due to health sanitizing laws. you may want to call ahead to reserve a spot and ask when exactly the factory is running. They have all the info at their website, sounds like a blast to do the tour and then eat at their cool cafe.....

Did you know Scharffenberger has a factory tour in Oakland, CA? and a choc cafe called Cacao i think...its on their website. How cool would it be to see that magic happen live in person...?!

You know, I've lived in the NY area for over 20 years and have been doing stuff with chocolate for more than a decade, and only met Rose for the first time last fall at my friend, Jean-Francois Bonnet's wedding. He used to be the exec-PC at Restaurant Daniel and is now at Tumbador, a private-label chocolate manufacturer in Brooklyn.I went to Williamsburg a couple of years ago and had dinner at Trellis. I was not blown away - but Marcel was not in the kitchen that night and maybe that's why. Do tell more about classes with Rose, won't you?
