Having personally processed more than 400 dried kilos of cacao in 2014, I have much experience of teasing out the best flavors in cacao. It is my belief that cacao fermentation plays a key role in chocolate flavors.

I agree. Based on conversations with artisan chocolate makers, fermentation is definitely one of the key steps to the best flavor development!
