Porcelana gets it's name from the porcelain color of the beans when they are harvested. After fermentation they discolor to a reddish-brick color, or a beige color. TRUE PORCELANA IS NOT DARK IN COLOR. If it is, then it's likely been blended with another bean. What you see in this photo is a 70% "dark" Porcelana chocolate bar nestled in some Porcelana cocoa beans, with a few broken open so you can see the inside.
