The longitudinal conches
20 years ago, these conches were used only to produce chocolate destined for the Japanese market. Felchlin was able to meet the needs of the market in less than two month's production each year. The Japanese were adamant about the quality of the chocolate produced in them, so even though they were in use only a short time each year, the company kept them because an important market demanded them. This is one of the luxuries of being a private company.
