I tasted 9 different plain dark bars of them in 2010, 2011 and the last ones in December 2012. Sorry to say this but overall I didn't like them. In my opinion the texture is terrible, no good melt and no delicate flavours. Two bars were even disgusting: San Martin and Papua New Guinea. San Martin was very bitter like aspirin and the Papua had very heavy smoke flavours. I spew them out and throw the bars away I hope they improved their production style since then....

I just tasted the Maranon from Bar Au Chocolat. Complete different than the others. I love this one too
Other brands making chocolate from those beans: Ritual, Nave, The Chocolate Tree and Bar au Chocolat.
I tasted Felchlin, French Broad and Nave. I definitely prefer Felchlin. I love their style. The long conch creates a sublime texture and melting. The flavours are very delicate and nice layered. Flavours I tasted: cassis, blackcurrant, nuts, a little spicy, burned sugar, cream, butter, liquorice. So on a scale of 10 that will be a 10 for texture and melting and a 9 for taste
Hi Lisa, easy answer: Felchlin! Great chocolate and they care about people and the environment. Their Gran Cru's are the best. My favourite is the Cru Sauvage 68% 60H conch. Wish you lots of success!
There are some new ones that I like very much, for example Danta's Chuao and Dandelion's Ambanja. But if I can only have one....I take a 2 kilo bag couverture of Felchlin's Cru Sauvage 68% - 60H conch That's enough for 2 weeks on a desert island. Then I wanna go home to taste other chocolate! This year I tasted a lot of good chocolate. But which one is the most gorgeous?
Idilio, Maranon Fortunato No 4, Rio Napo, Beschle 88%, Original Beans new and organic certified bars (yes, all those are made by Felchlin!), Danta, Amano Morobe, El Ceibo Heritage Limited Edition, La Maison du Chocolat's Grenada, Jean Paul Hvin's Piaroa, Potomac Upala 70%, Oialla by Bojesen, Harvest 2011 of Valrhona's Ampamakia and many more (my photos page 1 till Blanxart on page 5).
If I had to choose...based on taste only...this would be my top 3:
1. Idilio No 2, 4 and 12
2. Danta Las Acacias 70% and Chuao 70%
3. Amano Morobe
But my preferences change all the time...and new bars are on their way! I already ordered Dandelion and Fresco.
I'm curious about your favourites and what you suggest I have to taste in 2012.
