Equipment for making caramel / recipe

The cutter is adjusted by putting little spacers in between the blades so you are limited to what spacers you have. The cutting area is 12in and the total length with handles is 24 in. The blade are fixed to the rod so you have to kind of roll it and reposition. The cutter came with about 20 blades, and you could probably cut something up to 1.5 inches thick.

I am not sure what you consider a large batch, but it usually takes me about 45 min from measuring ingredients to pouring the caramel and it makes about a180 pieces. Most people that make huge batches use a rounded copper sugar pot with an open flame, but that is some serious stuff! I dip them and I find the most time consuming part cutting them up. I just bought a caramel cutter so that should help. Hope this helps.

What Do YOU pay for chocolate?

I get Callebaut for $3.79/lb here in Alaska from a local wholesaler. I was quoted $12/lb for Vahlrona before shipping, which cost more than the product to Alaska so I stopped there.

Newbie home maker

I was in the same boat as you when I began. I started with the REV2 and quickly outgrew it. I liked the machine and had no problems with it, but it was super noisy. That is a problem as I have 3 small children. I upgraded to the ACMC a couple years ago. It holds more chocolate and is not as noisy. It is still a bit loud, but not as bad as the REV2. I have outgrown the ACMC now as well and I am looking to upgrade again. Sorry I can't help you with the chocolatedude temperer. Just thought I would give you my experience with the other 2 you mentioned.

Skull mold

I am looking for an anatomically correct 3d skull mold. I have looked around a bit and found a place that sells chocolate skulls, but so far no luck with a mold. Any ideas where I should start looking? Thanks in advance!

Need advice on Airbrush Compressors

Pepper and smoked salmon truffle. The pepper was nice but the fish, not so much.
