Which Chocolate Spray Gun to Purchase?

Hello Wendy. I just read about the "CoolBot" system I am fascinated by it. Reading on their website, it helps that they are honest about where the system will NOT work and who should not buy it. Has it helped your tempering process?

As you might gather from my page I represent a company that deals with all things chocolate, save for actual provision of slabs. We also conduct workshops through ROTARY and other NGOs as part of their initiatives to generate employment amongst specific groups. Reading about "CoolBot" gave me an idea for a low-cost cooling environment that can be adapted and implemented at the grass-root level to take chocolate making to the next level.

Since we are not chocolatiers at our core, our workshops are generally catered towards the basics. However, you being a chocolatier and if you would be willing, I would be glad if you could provide an insight on your experience with this system.

Parts for a pomati Chocolate tempering machine

Hi Sam,

Let me reply to the two messages together:

1) I suggested sourcing from local manufacturers around you as said you were unable to locate parts and the only option you had was going to Italy. There should not be any need to go there since Pomati is helpful. Original parts is the preferred option always.

2) There is nothing wrong with the machine, in my case the customer took a sharp object like a screw driver and poked it in the area where the melted chocolate is pushed into the machine. They intended to push out the solid chocolate mass that was rotting in the tube but ended up puncturing a hole in the tubing system of the machine.

Parts for a pomati Chocolate tempering machine

Hi Chris,

I was in touch with Pomati (probably more than a year ago), with regards to repairs needed on a machine they had sold to a customer in India (Bangalore city, I am in Mumbai). They were more than happy to guide me and send over necessary parts (at the customers expense in this case as they were the ones who messed it up). Have you tried doing the same.

The only other option, is to approach local manufacturers / suppliers around you for a similar part. It goes without saying that the part would need to be as close to the original as possible.

Mol d'Art 6 kg Chocolate Tempering Machine

It's almost a year since you posted this question so I assume that by know you are an expert at this. Typically - assuming the chocolate slab is new, the machine is pre-heated for a few minutes and the slab is cut in small pieces (tiny bits like buttons) - a 1kg batch should not take more than 10-15 minutes. This is very open-ended as many variables need to be defined (not to mention how patient one is) but that time frame is a reasonable figure to start with.

Some advise on using chocolate colours, shimmers and colour sprays

Dear all,

I am a newbie here and I need some advise. This is my very first discussion and I hope to contribute as and when I can. I got some fancy equipment for use with chocolates that I make at home sometimes for friends and family. However, after experimenting a little I got mixed results so I thought I'd ask for some expert advise.

I found out resellers of IBC and Pavoni in my city and I managed to get hold of a few colours:

1) IBC Chocolate Colour Powder (100 gm bottle)

2) IBC Shimmer Colour Powder (25 gm bottle)

3) IBC Creative Colour Spray (150ml Can)

4) Pavoni Cocoa Butter COlour (200 gm bottle)

However, the advise I got from them on how to use these was at best confusing. I am unsure of which colours to dissolve in chocolate, which to spray directly, which to just powder and rub later ....

I am not a newbie when it comes to making chocolate and using chocolate equipments. However, since I have not done any formal course on this subject any advise would be welcome. I'll gladly oblige with pictures so you all can see if I am a good student or not.
