Hi everyone! Are any of you willing to post which couverture a you use and approximate pricing you get? I'm currently going through chocosphere and am very happy with their service but am wondering if better pricing on some of the brands can be obtained (perhaps once I can purchase large quantities) and where. I'm wondering if it's competitive to what you are all paying. Also just curious which couvertures you picked to work with. Thanks

Brad that's fantastic! May I ask, how did you go about getting the first few groups of customers? I'm assuming the word of mouth has continued to keep you booked but what did you do to get the word out the first few? Do they return to purchase retail also? Hi thank you for replying. I was using about 11oz + pure (reduced to a thick paste) per lb of white chocolate. No cream. I think I'm just kind of over it, it has so much cherry in it it's really dark but still not enough flavor. Oh well maybe a different cherry variety?

Ugh, so I'm having trouble getting the cherry flavor to come through in a morello cherry cheesecake truffle. I'm using quite a high percentage of reduced cherry puree but once it's in the very mild cheesecake ganache I get nothing ( okay VERY little)cherry flavor that comes through. It's driving me nuts! Any suggestions?

The only brand I've used so far is boiron and I really liked the flavor of the passion fruit but the morello cherry has too much sugar added. It's excessively sweet to my taste. The passion fruit was extremely runny like juice so I had to reduce it a lot. Just wondering how it rates compared to others since this is all I've tried as far as premade. Passion fruit would be pretty hard to come by here fresh, and when I can get it it's pretty spendy. I'm curious what brands are considered best/worst quality.

So every so often a batch of truffles will crack after dipping and hardeningI do a very thin coat by hand before dipping. Most pf my truffles are pretty thick in consistency(low moisture)What could be going wrong? So frustrated!

I have tried 3, yes 3 of the chocovision rev1 machines and so far they have caused me more headache then I care to relive. I contacted chocovision and after troubleshooting they sent me new baffles which seemed to work mediocrely for about 3-4 batches each. Contacted chocovision again, they sent out more baffles but if I want the machines looked overand serviced I have to pay to send the junk back and pay to have them fixed! They were possibly the worst kitchen appliance investment I've ever made!
Needless to say I am not interested in any chocovision models but would love advice on an inexpensive (1500 or less) tempering unit. Doesn't need to be fancy just get the job done. Thanks
