Hello everybody

I'm in the process of getting equipped for some home chocolate production. Regarding melanger, I have to products in mind: The Spectra 11 and Cocoatown ECGC-12SLTA . Both products seem to be very similar. What I like about theECGC-12SLTA ist that one can completely release the tension from the stones for the conching cycle so the cocoa liquor is continuously exposed to air without grinding it further. Any reviews on these products would be appreciated.

A next question would be how do these two melangers compare to the cheaper option Premier,

Hi Peter,I live in DC is very humid.Humidity in kitchen average between 60 to 75%.I will be panning Carmel, Almond & dry blueberry.Thanks,Ismael

Hi all.I'm thinking of buying panning machine to panning nuts & dry fruits.bath size 20 to 40 lbs.Selmi is just too expensive for me.I'm looking at Union Machinery and on the web they are so many.I would like to ask if anyone of you like one brand over the other?What I should look for before buying?I appreciate any advise.Thank youIsmael

My name is Ismael

I own Chocotenango (place of chocolate) in Washington DC

I'm professional trained pastry & savory chef. I been focusing on chocolate since 2005.

I reopened my business in Washington DC in October 2013.

I would like to come and learn more about chocolate making.

I'm very interested to learn about panning.

if any chocolatier out there will take me as student and be my mentor for a week or two please let me know.
