Hi Clay,Have you tried concentrated coconut nectar? Its almost like a honey but a lot better it has a low GI and healthier than a lot of sweetener. It is 100% coconut nectar. However it is expensive. Here in the Philippines it is being retailed at 8 usd per kg.Jun

Starting out now - what are the essentials?

This discussion has been a big help to me yes for us here in southern Philippines we do not have an expert on chocolate making, so we are on our own and thanks to the internet we get a glimpse of what should a chocolate artisan should have. We have been growing cacao for at least 30 years and our only product aside from beans is the traditional pure chocolate tablets molded by hand. It is used in making hot chocolate and chocolate rice porridge (in our dialect champorado). Tempering is foreign to us so I have really to learn the craft. Thanks a lot for you guys1

Hi Langdon,Wow this is great! First is the 50 to 150kg per week in raw beans per week? We are currently roasting at 65kg raw beans per day. Do I get it right that you have a system for the process Clay described that would cost us about 65,000 USD for a 65 kg per day capacity? Please clarify.And also we are very much interested on your microfinance or leasing scheme. Could you give us a complete proposal so we can think over it? Would you consider barter system of payment where we could supply you of our finished products?Im looking forward to reading your reply.Jun

Hi Clay,Could you give me information on where to access small scale cacao processing equipments such as stone grinders capacity (20 kg per batch) are they the same as melangeurs? And equipments for cocoa butter extracting? We make chocolate tablets (100% ground cacao nibs) in the Philippines called tablea.Thanks in advance.

Raw chocolate-- what is it really?

Hi Steve,We have been certified locally last 2003 but unfortunately since then we have not renewed our certification since we got no organic product buyer. Annual certification renewal would cost us at least 1000 USD so without a buyer, we will only be throwing our money for nothing, inspite of this we still grow our crops organically. Hi Sarah,We are cacao farmers in southern Philippines. For us raw chocolate are just sun dried cacao beans, you eat the beans unprocessed that is unroasted. The taste is weird, but from my readings it is supposed to be 80% healthier than roasted beans.Jun
