water ganache
After a back and forth discussion a week ago I made this water based ganache with EVOO.... it's Callebaut 811 dark with boiling water and 20% Olive oil.... i have made this often and it does have a surprisingly long shelf life , despite the water.
the absence of dairy creates a very distinct "sharpness" to the flavour and I LOVE the olive oil sheen
