You don't need freeze spray to do this, just compressed air. In production, you could use an airbrush compressor ...Freeze spray is used in assembling chocolate sculptures. It's a compressed gas, that when it leave the nozzle of the spray can, gets very cold and sets chocolate immediately so you don't need to hold pieces together until the chocolate used to "glue" the pieces together cools sufficiently.

Chef Rubber has the Freeze spray...which I don't think would be suitable for this.Good for assembling sculptures though!

Any can of compressed air will work for that. You can get that at a hobby store (Michaels, Hobby Lobby) or what I have done is just used my air compressor. It gets pretty cool effects.
