BenoƮt Nihant Chocolatier goes "Bean to Bar"

It is the certainly one of the most exciting steps in my chocolate life: I am now producing my own chocolate from fantastic beans! Only Giants like Callebaut and Marcolini ( aka Nestle) do it in Belgium. I am then proud to say that we are the only belgian craftsman to work from the bean!

..more to come in the following weeks, including a new experimental website!

Chocolate machinery

Dear Chocolate lovers!

I am a chocolatier from Belgium.

I am considering buying second hand equipment and would like to get your advises and recommendations on the models I found. First precision, I want to start slowly..but surely a small bean to bar process.

So, here are the machines :

First one is a BONNET 3 cylinders refiner

Second is a lab-size conche made by Petzholdt

WHo knows how these conche works?

Belcolade doesn't produce from the bean but from the mass

Callebaut is a belgo-swiss company...and produces massive volumes of industrial quality chocolate

Benot Nihant Chocolatier was founded 5 years ago and produces since last year single plantation chocolate from bean to bar. www.benoitnihant.be

Hello

I have just started experiments on my new coating pan. Is there anyone out there that could help me?

I put my hazelnuts into the pan, then pour the tempered chocolate...all began to mix...and a few minutes later, everything began to stick...and I got, a big "ball' of choco-hazelnuts"...horrifying...what is the problem do you think? How to avoid that? Is it a matter of spinning speed? of amount of material in the pan?
