Cheebs.The Dollar got stronger!I agree that it is a bunch of money but it's about speed. Once you know the mould designs you are able to set the amount and go (and not think). And if you can write prep lists in such a way that does not require an complete clean between flavors then your depositing can be done VERY quickly! I have one in my test kitchen, sometimes I use it, sometimes I don't but if I was in production every day, I would use it.brian

Cleaning polycarbonate molds.

Some recommendations for detergents and rinse aids~non-alkaline~non-chlorinated~non-tainiting~low foaming~neutral pH (as near 7 as possible not to exceed 9)Max water temperature at any stage below 140F/60CUsing soft water and soft/demineralized water at final rinse.

HEALING WOUNDED CHOCOLATE MOLDS

Susie.It's kinda hittin' a moving target. I have mould in my kitchen that I use very regularly that are older than two years but I don't wash (unless disaster strikes) and I am fairly gentle with but I also know confectioners that have gotten less than a year based on their use. As per your original question, you will know when they stop working. And I am interested to hear more about this Micro-Smooth.b

HEALING WOUNDED CHOCOLATE MOLDS

My concern about using an item that will remove scratches from a cd is its "food-safeness." Polycarbonate for food applications is food safe and so somewhat molecularly different than a non food-safe polycarbonate. Having said that, this product may actually speed up the degradation of the mould?Generally speaking the best solution for a mould is not to have a problem in the first place, I know that's kind of a cop out answer. We tend to recommend washing as little as possible but even with perfect conditions the mould is going to have a "shelf life" and wear out. Cool Tool: Chocoflex Spherical Truffle Mold

Brad.I-1158 is a polycarbonate injection mould, probably similar to your bar moulds. It is not flexible and we tend not to recommend using these moulds for anything other than chocolate. In order to make perfect spheres, I recommend having two that we can hinge together.brian
