Hi. Thank-you. We are trying hard to create a new dynamic for chocolate. I used the Little Dipper to temper chocolate for bars before I bought the Selmi. I used it a handful of times to dip strawberries or make small batches of chocolate or to temper chocolate to make a ganache. These days I use the Selmi to do it all.
Thanks Paul. I got a good laugh at the picture of one of your bars on a dinner plate setting with wine glass. Very, very creative! It looks like you use some larger equipment for tempering/molding. What kind of usage did you Little Dipper see in your enterprise?
Hello. The serial number is 080120. I purchased the unit three years ago and had it rebuilt. I do not know the age of the unit but would guess around 10 years old.
