Do you have any recommendations about any chocolate or confectionery stores to visit in Nebraska, Minnesota and Iowa? I am familiar with BT McElrath in Minnesota and I have also checked Chocomap and Yelp for listings. Iam specifically seekingsmall independent candy makers.

Are "chocolate jams" shelf stable?

Wendy-Check with a food science professor at a university. I would be concerned with the method used (water bath/pressure) to can/preserve this item and the amount of fat added. The acidity will assist with the pH level, but it may not offset the fat content of the chocolate added in to the recipe. University of California, Davis and Penn State have 2 very good food science departments (as well as many other universities in the US).As an ex-Master Food Preserver I would love to know what kind of feedback you recieve. According to the Sunflower Sugar Arts company that makes "Disco Dust":"Sunflower Sugar Art's Disco Dusts have a larger grain than Pearl Dust or Sparkle Dust and this imparts a wet or dewy look to flowers. Non-toxic, 3g. "Even though it is non-toxic, I have seen on some sites carrying disco dust (not Sunflower's site), that it is not recommended for edible ornaments. Is it FDA approved? Does anyone know?I have seen luster dust that is considered non-toxic, but is not FDA approved.

Hey Brad-Is what was used different then Lusterdust? I have used Lusterdust in classes and on my own...and though a bit of a pain, nothing as bad as what you were describing. It works best with a paint brush if using in a mold.

Chocolate without Soy Products

I am seeking a chocolate with no soy products added (including soy lecithin). Can anyone recommend a maker? Can be either dark or milk. I know someone who is allergic to soy and would like to make some truffles for him. Thanks.

Graphic for Business

Andre- Thanks for the offer. It is a paint option, but I can save as a JPEG or GIF (nice thing about paint). That should allow you to change it to an illustrator file. I know a bit about graphic conversion (had to do it over the years), and know that this is possible. I appreciate any help you can give me.Danielle

Graphic for Business

I created my own graphic for my business, but need to find a graphic artist that can convert it from a paint file to a illustraor file in order to send it to companies for printing on ribbons/t-shirts/labels. I would prefer not to buy a full version of illustrator...any ideas?

Hi Gary-I have created my own chocolate tours of San Francisco, Los Angeles and Chicago....depending upon how long you have and whether you are renting a car, I can definately suggest some locations for you to visit. Email me if you would like and I can help you with San Francisco (I made it to 7 stores in 4 hours walking and taking the bus). I can also suggest other confectionery stops as well if you are seeking them.

Chocolate on the 101 Between Los Angeles & Oakland

Rebecca-You missed Calibressen in Carpinteria...he is a French chocolatier that moved out here...next time you drive up the coast you might want to try him. Also you can find another local chocolatier, Jessica Foster, at Lazy Acres in Santa Barbara...she doesn't have a storefront. Besides Maya, that's about it in Santa Barbara....There is a homestyle candy shop in Ventura called Trufflehound...they make a variety of candy and last I heard they use Santa Barbara Chocolate for their dark.....The owners were both food science majors and I beloieve they have taken Richardson's courses at Davis....I know that you already took your tour, but in case you take another one, I thought I would recommend these shops as well.
