Thanks for explaining the differences Brad. Your right about expensive! I was getting quotes of $5,000 +... yikes! I like your suggestion as I need my Oompa Loompas for future work!

I am going to try and see what I come up with. Definitely I see a challenge.

Thanks for your reply Brad. I appreciate it! I'll check it out. Do you know if there is a big difference in terms of the material used? I am actually looking to create small cavities or inclusions within the large mold that will be approx. 1/4 inch square in size so you can imagine just how many cavities it would hold. Thanks again.

Hello everyone including all lurkers!

I saw the Micelli polycarb molds advertised on the Chocolate Life but I am looking for a much larger industrial mold. I am looking for a mold that is 24" x 16". Anyone have any suggestions on who to contact for this size of mold?

From what I have read he was a very special person clearly defined in the book of life, a winner. He got it.

Unfortunately, I did not have a chance to meet him and I wish I had. I am sorry to hear of his passing and may he find the same amount of happiness he was experiencing in Grenada in another life.

Washing Strawberries

Hi Karen,

Besides our bean to bar business we sellmany chocolate covered strawberries year round. We use organic strawberries and find that it is best to wash them approximately an hour or two before dipping otherwise the shelf life onthe strawberries is diminished significantly. We also do not refrigerate the berries as this tends to shorten the shelf life of the berry. We use large stainless steel bowls to wash the berries and then place them on baking pans to dry. We snip any dead leaves and make sure that berry is not bruised or damaged. The majority of the time the berries are in perfect condition as we purchase them usually the day before they are picked. Not sure where you live but we get sometimes spoiledhere with our fresh strawberries!Hope this helps.

What is a "Traditional Chocolate Truffle"?

Hi Bill,

A traditional confectionary "truffle" is best described as a ganache with no tempered chocolate involved. A ganache is simply chocolate and cream. The ganachecan be rolled in a variety of coatings including cocoa powderor diced or finely chopped nuts/seeds.Since the outer layer of ganache is not covered or protected with tempered chocolate the shelf life is very short (around 2 weeks). They will also need to be refridgerated, preferablycovered with plastic wrap.

World record chocolate performance

Congratulations to Richard Foley and his Qzina team in Irvine, CA for their world record performance! This is a pretty cool sculpture created by his chocolate team, a tribute to the Mayans. Check out the photos as they are pretty impressive. I hope to get down there for a visit and have a look.
