Help needed finding cake cutter wire in bulk!

The Cake cutter I use has a serrated blade that is very similar to what is on a band saw. You might want to check and see if a band saw blade will work for what you are looking for.

Air bubbles!

For the higher detail mold I always heat my molds to the working temp of the chocolate. That way the chocolate is not cooling right when it hits the mold. It gives the vibrating table a better chance of getting the bubbles out.

I got the same Tulsa request. I guess that one is going around. I asked for money for the samples and if she did order the cost would be applied as a credit. She stopped emailing me.

If I can only afford to go to one industry show a year which one is a can't miss? I want to see packaging, machines, molds, and talk with chocolate vendors. Is there a show that covers it all?

Bar Packaging

I wholesale truffles, bon bons, and other confections. I have recently received requests for specialty bars. I am not sure where to start with the packaging for bars. I have seen the machines at shows but do not think I will do enough volume to justify the cost. What have you found to be the best way to package small run bars?

Prefamac Molding Machine

I recently bought used 60lb molding machine made by Prefamac. Everything seems to work except the most important part. It doesn't hold temperature. I have emailed back and for with Prefamac and it seems they are out of ideas because they quit replying to my emails. Does anyone know of a place in the states that will repair this machine or I can call for help?

Guittard/callebaut/Valrhona ?

What is the viscosity of the chocolate that you are using. You may need to switch to a chocolate with a lower viscosity. The more viscous the thicker the shell. I use a Valrohna with 4 drops on a 5 drop tear system and helps keep the shell thin.

I have interest by some large chain stores so that is a possibility. I would rather play it safe and get my packaging set up done once and not have to adjust later.

I have opened a chocolate truffles business and have sold wholesale for a while. I am looking in to starting selling retail as well. I need to figure out the nutritional information on the product I am selling. Is there a good software for this task that you would recommend?

Kerry,Are you using colored cocoa butter for every color or do you have to add white chocolate to any of your colors? Are you still printing on overhead projector acetate sheets or did you find a source for the thinner sheets?
