understanding the chemistry...

I made a batch of vegan brownie bites from the Baby Cakes Bakery cook book. They came out amazingly moist and delicious. I was surprised how lava like they were and that they retained their moisture so well. I'm going to try a few other recipes in there to learn about the chemistry of using coconut oil, xanthan gum and other flours I'm not used to. Fun stuff!

The worst part:the mini-muffin pan I used was almost new and some how got in contact with water on the bottom. It's started to rust and I'm not sure which chemistry experiment to do to make them like new? Any ideas on how to bring it back to looking brand new?

2010 Fancy Food Show

I love it- it's a place to meet the products and the people, in a place that is focused on sharing information about both. Well worth the trip. Fancy Food Show is online and they often give discounts if you register early.

Imagining the music as you take "The Journey of The Pod"

Reverie', music from the Ivory Coast, some Happy Feet...what else would capture the essence of the journey as the pod describes its passage from the past, present and future? I have some ideas, yet what would you want to hear?Let me know and I'll check it out as the final details on the exhibit for the Bucks County Chocolate Show come together. Check it out.

Calling all Chocolatiers: What are YOU Making Special for Easter This Year?

I'm making macaroons drizzled with chocolate...for Passover. This is rich, flavorful and a real treat. I drizzled "enjoy life" chocolate chips, melted. They're dairy, soy, and gluten free and as a plus-pareve. I'm experimenting so they got tested out. Any dark chocolate 70%, preferably kosher for passover, would be great as a compliment to the almond flavor. Want the recipe? Check out Recipes with Chocolate

Mast Brothers Chocolate- bean to bar producer out of Brooklyn, NY

Mast Brothers aren't as completely as obscure as they sound because they welcome people into their 'factory' to reach their customers and fans. Taking the trip to see it is on my radar since I reached out to them to represent local bean to bar at the Bucks County Chocolate Show. It feels like they're paving a path similar to Taza.
