The 2010 Demo Class list is heavy on chocolate classes and includes:
The Science of Baking with Chocolate
Improving Shelf Life in Chocolate Confections
All Chocolate Buffet
Chocolate will also be featured in classes like, Plated Desserts, Entremets, and Gelato Cakes and Coupes. PLUS there's a class on molecular gastronomy and mixology. AND MORE.
There is a separate Hands-on track featuring a class on Competition Showpieces (sugar AND chocolate), and two Wedding Cake classes.

You could become a kitchen volunteer. You don't get to sit in on all the classes (you're assigned one to one chef) but you can mingle with the other students and should be able to get a pass for the championship as well. Visit forums.worldpastryforum.com or pastrychampionship.com and click on the "Volunteer" link.Otherwise, there are no scholarships. There is the option to finance but you'd have to get in touch with the contact on the application form to see what that entails.
Clay, do you know of any possibility of sponsorship, worktrade, or price reduction? Im sure everybody wants a price break any chance they get, but Im involved in my own startup currently and really cant afford $2000 at the moment, but I could see this as being an amazing personal investment in industry exposure, business contacts, and personal education.
Yikes! What a HOT place to teach chocolate-making! in summer yet. I know, I know...air conditioning. Wish I could be there. I'll be catering a wedding in Taos, New Mexico at the time. Have a yummy time.Jamie
