Rev1 Problems - won´t melt!

I actually did contact Chocovision and based on what I told them the thingy that warms the machine is kaput! So I am sending the machine for them to fix it.

Rev1 Problems - won´t melt!

Good morning, everyone. I hope you are all well.

I had not used my Rev 1 in a couple of years. Last Saturday I took it out and made a few batches of molded chocolate and the machine worked perfectly.

This Saturday it did not! Everything did what they were supposed to do, but the temperature did not kick in and the machine did not melt the chocolate - so, no tempering.

The bowl was spinning, all the lights were on...everything looked fine, just the temperature wasnt working. I unplugged the machine, reset it...and nothing.

I emailed Revolation and am waiting for a reply. In the meantime, has anyone gone through something similar that could shine a light on what may be going on?

Looking for a partner in New York City

Hi everyone.

I am a graduate from Ecole Chocolat from 2009, and 2 years later I still don't have my own chocolate business!

After a lot of thinking, I believe the main reason is that I can't do it alone. Just like in almost any business, a partner is essential to a startup - without that, for me, chocolate will always be a hobby, which is not what I am looking for.

So I am reaching out to the forum members who live in New York City and who are on the same boat I am now:

- I work full time (in Brooklyn).

- I don't have a lot of money to start something fancy, so working smart for me is the way to go.

- I want to create a business that, eventually, will allow me to quit my 9-to-5 so I can work full time in the business.

What I have in place so far:

- The company is called DaCosta Chocolates and is registered as a LLC.

- Insurance (paid until August 2012).

- A commercial kitchen we could use. The kitchen belongs to a catering company, which is located in Brooklyn, which means we could have access to the kitchen when they are not working on it. There are other options also available when it comes to kitchens. We can discuss when we talk in person.

- I have a great accountant that is very inexpensive and very sensible to the needs of small business owners - as he is a small business owner himself.

So, if you want to start working towards a great business with a nice guy (I am a very nice guy!!), drop me a note. I want to take it slowly, and build the business in a way that won't burn us out - but the main goal is to create a serious company that will make us money, and keep us happy by doing what we love!

I have a quick question. I am looking into pectin, but there are a few varieties available and I am not sure the one I should get, as I need to get a small amount to test some recipes.

I found a lot of options on Amazon.com - and that's the issue: too many options.

What brand do you use? And where do you get it from, if not from Amazon.com

I am also in New York City.

As for internship people usually like to work with people who do not live in the same geographical region - after all, you will become competition.

I did exactly the same thing you did: I took the 2 chocolate technique from ICE, followed by the Ecole Chocolat online training.

Once you are done with the Ecole Chocolat training you can apply for internship with chocolatiers from the US and one from Canada. I have not done the internship yet, but I am considering it more and more.

You should keep looking for opportunities in NYC, but just consider that you could go someplace else you've never been before, work at a place that is used to interns, and do not have to worry about the ethics of learning from someone who will be your competition in the near future.

Weekend Event at someone's business

I guess my issue with the flat fee is that I have absolutely no idea what kind of money I may (or may not) make during the weekend.Sigh...thank you for the reply.I know some places will just let you use the space for free, as having different vendors will usually bring more people to the place and this may help you sell your own stuff.Again, thank you.

Weekend Event at someone's business

A friend of mine runs an unusual business: she has a brownstone in Manhattan where everything is for sale - everything!
She has events now and then where she invites musicians, artists, etc, which in turn bring people to see the event and purchase things in the house. Her business is growing and she is planning a holiday weekend, where different vendors will be invited to sell their wares. I am one of the invited vendors.

This is new for both of us, so we are going back and forth on $$. She is not planning on charging a flat fee for the vendors to attend, but for a percentage of the sold items. The question is what percentage would be fair for both of us? 60/40 (60% for me, 40% for her)? More? Less?

Has anyone done anything like this in the past?
Or would anyone has some pointers to share on this type of deal?

How detailed a list of ingredients should be?

Thank you all for the replies. I believe I was not very clear in my question. The ingredient list is not to be applied to the packaging via label - the size of my business waives me from doing so.I am going to print a letter size flyer to be displayed on my table. That's all. There are no requirements to list detailed ingredient information, but a general specification.But Mike already gave me a great link I can use for this upcoming market and for any future labels I may need to create.Again, thank you all!!

I am getting ready to start working out of a market and one of the requirements is that I need to have on display my list of ingredients - but the market does not have a standard way on how to list the ingredients.

My question is: how detailed can this list be?

For instance, in one of my fruit pieces I have the list as:
- Fruit puree, fruit liqueur, Heavy Cream, Dark Chocolate, White Chocolate, Butter, Corn Syrup, Colored Cocoa Butter.

Can I simplify this a little so the ingredients are not so obvious? Say, can I say "dairy" instead of heavy cream & butter? Can I use another word for "corn syrup" - I don't want to hide it, but is there a more generic word I could use?

The molds look cool. One big challenge chocolatiers have when working with molds is air bubbles. The more detailed the mold is, higher the chances for air to get trapped.I love the single dragon (C)...very cool!

Schlepping Chocolate to Markets & Events

I am going to start selling at markets and special events here in New York City, and one of the things I am having trouble deciding is how to transport the chocolates and table fixtures to the event.
So, for the ones who work (or worked) on farmer's markets, flea markets, tabletop shows, etc, how do you (or did you) transport your chocolates and accessories?

I do not have a car and will rely on public transportation and cabs! Sigh...

Although you asked Lana, let me chime in.I've taken the Ecole online class this year; but, just like you, I am very hands-on and visual. So, before starting the online class, I took an introductory class at a culinary school in my city.That was invaluable! Once I had that first glimpse into chocolate making, I could more easily understand the concepts given out by the Ecole.Now, regardless of the actual chocolate making experience through the Ecole, the amount of useful information they give you is fantastic - the course is worth its price for the resources alone!Best of luck,Andre Costa

Internship in San Francisco

Chocolate Stores in San Francisco

Hi Mark.Actually that was the first thing I did; then I thought I would have too much information without necessarily knowing what was what - I live in Manhattan and I did the same thing. I ended up going to some very odd places!Chocomap is a good way to start, but it is always nice to have some personal feedback - which just made me think about something. It would be nice if chocomap would allow us to add comments to the stores they have listed. Now that would be helpful.
